| Honey Roasted Peanuts
Place peanuts in a 1-litre ovenproof glass jug. Cook in microwave on high for 4-5 minutes, stirring or shaking the jug at least once, preferably twice, until peanuts are lightly browned. Add honey, stirring until it has all melted off the spoon. Cook another 1-2 minutes, stirring once. Salt to taste and leave to cool. You will have to experiment with the cooking times. These times are for my 650-watt oven, which is a good 18 years old. While these peanuts are much nicer than the ones bought from the supermarket (which taste more of sugar than honey) they are usually best eaten soon after they have cooled. If left until the next day they could be rather sticky. If you don’t have a microwave, try cooking them spread out on an oven tray for about 10 minutes at 200°C.
