IMPORTANT NOTE: I have used a mixture of one-third sodium bicarbonate (baking soda) to two-thirds cream of tartar (potassium hydrogen tartrate) instead of baking powder since about 1970. While I didn’t start doing this to avoid baking powders that contain aluminium, this is the best and cheapest way to avoid such baking powders. Just buy the cheapest brands of baking soda and cream of tartar your supermarket has. Sodium bicarbonate has a specific molecular formula (CHNaO3) and if anything was added to it it wouldn't BE sodium bicarbonate. The people who market baking sodas as being aluminium-free are making money from gullible consumers. Don’t be one of them!
