Cheese Fingers

Great with tomato soup, these are also a treat on their own.

Flaky or Crusty Pie pastry
Grated tasty cheddar cheese
1-2 good pinches cayenne pepper (optional)

You don’t need a full block of pastry for this. Half a block makes around 3 dozen fingers. These are also a good way to use up scraps of pastry left over from other baking.

Roll the pastry into a thin oblong. Sprinkle one half with the cayenne, rubbing it in to spread it as evenly as possible. (It will, of course, spread more with the rolling and re-rolling of the pastry.) Sprinkle grated cheese on top of this and fold the other half of the pastry over. Roll thinly. Spread more cheese over one-half, fold the other half over and re-roll. Do this once more. Cut into strips about half an inch wide and approximately the length of a finger. Bake at about 400°F (210°C or about 190°C if the oven is fan-forced) for 10-15 minutes, or until deep golden brown all over. If you feel they need more browning after 10 minutes, the oven can be turned off to save power.
